Ingredients

  • 150 grams dairy-free margarine
  • 4 tablespoons golden syrup
  • 100 grams light brown sugar
  • 150 grams plain flour
  • 1 teaspoon baking powder
  • 2 teaspoons ground ginger
  • 50 grams crystallized ginger, chopped
  • 150 grams icing sugar
  • 2 tablespoons ginger juice (squeeze from grated fresh ginger)

Directions

Step 1

Preheat your oven to 180°C (350°F) and line a 20cm x 20cm (8-inch x 8-inch) square baking tin with baking paper.

Step 2

In a medium saucepan, melt the dairy-free margarine and golden syrup over low heat until smooth. Stir in the light brown sugar and mix thoroughly.

In a separate mixing bowl, combine the plain flour, baking powder, and ground ginger.

Pour the melted mixture into the dry ingredients and mix together until well combined. Fold in the chopped crystallized ginger.
