Ingredients

  • 2 cups Rice
  • 1 cup Urad dal (split black gram)
  • 0.5 teaspoons Fenugreek seeds
  • 1 teaspoon Salt
  • 0 as needed Water
  • 0.25 cup Dairy-free ghee alternative
  • 0.25 cup Oil

Directions

Step 1

Rinse the rice and urad dal well. Soak the rice and fenugreek seeds in one bowl and the urad dal in a separate bowl for 6 hours or overnight.

Drain the rice and blend with fenugreek seeds and just enough water to make a smooth batter. Transfer to a large bowl.

Drain the urad dal and grind to a smooth batter with minimal water. Mix with the rice batter.

Step 4

Add salt to the batter and mix well. Cover and let it ferment in a warm place for 8-12 hours or until it doubles in volume.

Once fermented, stir the batter gently. Add more water if needed to achieve a pouring consistency.

Mix the dairy-free ghee alternative with oil in a small bowl.

Heat a non-stick or cast-iron tava (griddle) on medium-high heat. Grease lightly with oil.

Pour a ladleful of dosa batter onto the center of the tava and spread it in a circular motion using the back of the ladle to form a thin dosa.

Drizzle a teaspoon of the ghee-oil mixture around the edges and over the dosa.

Cook until the edges start lifting and become golden brown, then flip and cook the other side for a few seconds.
