Ingredients

  • 500 grams grated carrots
  • 250 ml coconut milk
  • 2 tablespoons coconut oil
  • 100 grams sugar
  • 30 grams raisins
  • 30 grams cashew nuts
  • 1 teaspoon cardamom powder
  • 10 strands saffron strands
  • 2 tablespoons pistachios, sliced

Directions

Step 1

Heat a non-stick pan over medium heat and add the coconut oil.

Step 2

Once the oil is hot, add the grated carrots and sauté them for 5-7 minutes until they soften.

Step 3

Add the coconut milk to the softened carrots and mix well.

Step 4

Cook the mixture on low heat, stirring occasionally, until the coconut milk is absorbed and the carrots are cooked thoroughly, about 20 minutes.

Step 5

Add the sugar to the pan and mix well. Continue to cook for another 10 minutes, stirring continuously, until the mixture thickens.

Step 6

In a separate small pan, lightly toast the cashew nuts in a teaspoon of coconut oil until golden brown.

Step 7

Add the toasted cashew nuts and raisins to the carrot mixture and stir to combine.

Step 8

Sprinkle in the cardamom powder and saffron strands, mixing everything together evenly.

Step 9

Cook for an additional 5 minutes, allowing the flavors to meld together.

Step 10

Garnish the dairy-free Gajar Halwa with sliced pistachios before serving.
