Ingredients

  • 1 cup Almond flour
  • 1 quarter cup Coconut oil, melted
  • 2 tablespoons Maple syrup
  • 1 teaspoon Vanilla extract
  • 1 pinch Pinch of salt
  • 1 cup Coconut milk
  • 2 tablespoons Cornstarch
  • 1 teaspoon Lemon zest
  • 1 cup Strawberries, sliced
  • 1 quarter cup Blueberries
  • 1 piece Kiwi, peeled and sliced
  • 2 tablespoons Apricot jam

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

In a medium bowl, mix almond flour, melted coconut oil, maple syrup, vanilla extract, and a pinch of salt until a dough forms.

Step 3

Press the dough evenly into 6 mini tartlet pans, ensuring the dough is firmly pressed and covers the base and sides.

Step 4

Place the tartlet pans on a baking sheet and bake for 10-12 minutes or until the edges are golden brown. Let them cool completely.

Step 5

For the filling, combine coconut milk and cornstarch in a medium saucepan over medium heat. Whisk consistently until the mixture thickens and simmers.

Step 6

Remove the saucepan from the heat and stir in maple syrup and lemon zest. Allow the mixture to cool slightly.

Step 7

Once the tartlet shells are cool, fill each shell with the coconut milk mixture.

Step 8

Top each tartlet with a mix of strawberries, blueberries, and kiwi slices in a decorative pattern.

Step 9

In a small saucepan, heat the apricot jam over low heat until it becomes runny. Brush a thin layer of the warmed jam over the fruit to give it a glossy finish.

Step 10

Refrigerate the tartlets for at least 1 hour to set before serving.
