Ingredients

  • 2 cups Gluten-free rolled oats
  • 1 cup Almond flour
  • 0.5 cup Coconut sugar
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 0.5 cup Coconut oil
  • 1 teaspoon Vanilla extract
  • 3 cups Mixed berries (fresh or frozen)
  • 0.25 cup Maple syrup
  • 1 tablespoon Cornstarch
  • 1 tablespoon Lemon juice

Directions

Step 1

Preheat your oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper.

Step 2

In a large bowl, combine the oats, almond flour, coconut sugar, baking powder, and salt. Mix until evenly blended.

Step 3

In a small saucepan over low heat, melt the coconut oil. Remove from heat and stir in the vanilla extract.

Step 4

Pour the melted coconut oil mixture into the dry ingredients and stir until combined and crumbly.

Step 5

Set aside about 1 cup of the mixture for the topping and press the remaining mixture firmly into the bottom of the prepared baking dish to form the crust.
