Ingredients

  • 4 medium Potatoes
  • 3 tablespoons Vegetable oil
  • 1 teaspoon Mustard seeds
  • 1 teaspoon Cumin seeds
  • 0.5 teaspoon Asafoetida (hing)
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Red chili powder
  • 1 teaspoon Coriander powder
  • 1 teaspoon Salt
  • 2 tablespoons Fresh coriander leaves
  • 2 Green chilies

Directions

Step 1

Peel the potatoes and cut them into small cubes, approximately 1/2 inch in size. Rinse them in cold water to remove excess starch and set aside.

Step 2

Heat the vegetable oil in a non-stick pan over medium heat.

Step 3

Once the oil is hot, add mustard seeds. When they start to crackle, add cumin seeds and asafoetida.

Step 4

Add the sliced green chilies and sauté for about 30 seconds.

Lower the heat slightly and immediately add the turmeric powder, red chili powder, coriander powder, and salt. Stir quickly to prevent the spices from burning.

Add the cubed potatoes to the pan and mix well to coat the potatoes with the spices evenly.

Cover the pan with a lid and let the potatoes cook over low heat, stirring occasionally every few minutes, to ensure even cooking. Continue this process for about 15-20 minutes, or until the potatoes are tender and cooked through.
