Ingredients

  • 400 grams canned fava beans
  • 3 tablespoons olive oil

  • 1 teaspoon ground cumin
  • 2 tablespoons lemon juice
  • 200 grams dairy-free yogurt (such as almond or coconut-based)
  • 2 tablespoons tahini
  • 3 tablespoons fresh parsley
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons pomegranate seeds (optional for garnish)

Directions

Step 1

Drain and rinse the canned fava beans under cold water. Set them aside.

In a medium saucepan over medium heat, add 2 tablespoons of olive oil.
