Ingredients

  • 1.5 cups All-purpose flour
  • 3.5 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 1 tablespoon Sugar
  • 1.25 cups Almond milk
  • 1 Egg
  • 1 teaspoon Vanilla extract
  • 3 tablespoons Coconut oil, melted
  • 1 teaspoon Coconut oil, for cooking

Directions

Step 1

In a large mixing bowl, whisk together the all-purpose flour, baking powder, salt, and sugar until well combined.

Step 2

In a separate bowl, whisk together the almond milk, egg, and vanilla extract.

Step 3

Make a well in the center of the dry ingredients and pour in the wet mixture, followed by the 3 tablespoons of melted coconut oil.

Step 4

Gently fold the wet ingredients into the dry ingredients until just combined. Do not overmix; the batter should be slightly lumpy to ensure fluffy hotcakes.

Step 5

Heat a non-stick frying pan over medium heat and lightly grease it with 1 teaspoon of coconut oil.

Step 6

Pour about 1/4 cup of batter onto the pan for each hotcake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.

Step 7

Flip the hotcake and cook for another 2-3 minutes on the other side, until golden brown.

Step 8

Repeat with the remaining batter, greasing the pan as needed between batches.

Step 9

Serve hot with your favorite toppings like maple syrup, fresh fruits, or a sprinkle of powdered sugar.
