Ingredients

  • 4 large egg whites
  • 2 tablespoons water
  • 0.25 teaspoon salt
  • 0.125 teaspoon black pepper
  • 1 tablespoon olive oil
  • 0.5 cup spinach
  • 0.25 cup bell pepper, diced
  • 2 tablespoons green onions, chopped
  • 1 tablespoon fresh parsley, chopped

Directions

Step 1

In a large mixing bowl, combine the egg whites, water, salt, and black pepper. Whisk the mixture thoroughly until frothy and well combined.

Step 2

Heat a non-stick skillet over medium heat and add the olive oil. Allow the oil to heat for about 30 seconds.

Step 3

Add the diced bell pepper and sauté for 2 minutes until softened. Add the spinach and cook, stirring occasionally, until wilted, about 1 minute.

Step 4

Pour the egg white mixture into the skillet and cook without stirring until the edges begin to set, about 1-2 minutes.

Step 5

Using a spatula, gently lift the cooked edges of the omelette, tilting the skillet to allow any uncooked egg whites to run underneath.

Step 6

When the omelette is mostly set but still slightly soft on top, sprinkle the green onions and parsley over one half.

Step 7

Gently fold the omelette in half and continue to cook for another 30 seconds to 1 minute to allow the inside to completely set.

Step 8

Transfer the omelette to a plate, garnish with additional fresh herbs if desired, and serve immediately.
