Ingredients

  • 12 ounces fettuccine pasta
  • 1 cup raw cashews
  • 1 cup water
  • 0.25 cup nutritional yeast
  • 2 tablespoons lemon juice
  • 2 garlic cloves, minced
  • 2 tablespoons extra-virgin olive oil
  • 1 cup unsweetened almond milk
  • 0.5 teaspoon salt
  • 0.25 teaspoon freshly ground black pepper
  • 2 tablespoons chopped fresh parsley

Directions

Step 1

Place the raw cashews in a bowl and cover them with hot water. Let them soak for at least 30 minutes, then drain and rinse well.

Step 2

In a blender, combine the soaked cashews, 1 cup of water, nutritional yeast, lemon juice, garlic, olive oil, almond milk, salt, and pepper. Blend until smooth and creamy. Set aside.

Step 3

Bring a large pot of salted water to a boil. Cook the fettuccine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

Step 4

Return the pasta to the pot and pour the cashew cream sauce over it. Use a fork or tongs to toss the pasta, adding reserved pasta water a few tablespoons at a time, until the sauce reaches your desired consistency.

Step 5

Taste and adjust seasoning if needed. Continue tossing until the pasta is well-coated and gently warmed through.

Step 6

Serve immediately, garnished with chopped fresh parsley.
