  • 1 Bay leaf
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 cup Vegetable or chicken broth
  • 400 grams Fettuccine pasta (dairy-free)
  • 2 tablespoons Fresh parsley, chopped
  • 2 tablespoons Nutritional yeast (optional for a cheesy flavor)

Directions

Step 1

Heat olive oil in a large pot over medium heat.

Add the chopped onion, diced carrot, and diced celery. Saute for 5-7 minutes, until the vegetables are soft and the onion is translucent.
