Ingredients

  • 1 cup raw almonds
  • 2 tablespoons flaxseeds
  • 1.5 tablespoons chia seeds
  • 2 tablespoons coconut flour
  • 1 teaspoon baking powder
  • 2 tablespoons olive oil
  • 0.5 cup warm water
  • 0.5 teaspoon salt
  • 1 large egg
  • 4 leaves bibb lettuce
  • 8 ounces sliced turkey breast
  • 1 avocado
  • 1 small cucumber
  • 0.5 cup cherry tomatoes
  • 1 tablespoon lemon juice
  • 0.25 teaspoon black pepper

Directions

Step 1

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

Place the raw almonds in a food processor and process until finely ground.

Step 3

Add flaxseeds, chia seeds, coconut flour, baking powder, and salt to the ground almonds. Pulse until well combined.

Step 4

In a separate bowl, whisk together the warm water, olive oil, and egg until smooth.

Step 5

Slowly incorporate the wet mixture into the dry ingredients by pulsing in the food processor until a dough forms.

Step 6

Divide the dough into four equal portions and flatten each one between two sheets of parchment paper to form thin rounds.

Step 7

Transfer the rounds to the prepared baking sheet and bake for 10 minutes, or until the edges start to brown and the wraps are firm.

Step 8

Remove wraps from the oven and allow to cool slightly before using.

Step 9

Meanwhile, slice the avocado and cucumber, and halve the cherry tomatoes.

Step 10

To assemble each wrap, place a piece of cooled keto wrap on a flat surface and layer with a leaf of bibb lettuce.

Step 11

Add 2 ounces of sliced turkey breast, a few slices of avocado, cucumber, and a handful of cherry tomato halves.

Step 12

Drizzle with lemon juice and sprinkle with black pepper to taste.

Step 13

Roll the wrap tightly and slice in half if desired before serving. Enjoy your nutritious and delicious dairy-free, keto-friendly wrap!
