Ingredients

  • 1 lb extra lean ground veal
  • 0.5 cup almond meal
  • 1 large egg
  • 3 cloves garlic
  • 0.5 medium onion
  • 0.25 cup fresh parsley
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.5 tsp dried oregano
  • 0.5 tsp dried basil
  • 2 tbsp olive oil
  • 2 tbsp water

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Step 2

Peel and mince the garlic cloves. Finely chop the onion and parsley.

Step 3

In a large mixing bowl, combine the extra lean ground veal, almond meal, egg, minced garlic, chopped onion, chopped parsley, salt, black pepper, dried oregano, and dried basil.

Using clean hands, mix all the ingredients until they are well combined. Be careful not to overwork the mixture, as this can make the meatballs tough.

Add the water to the mixture and gently fold it in until the mixture is slightly wet and forms a cohesive mass.
