  • 150 g Raspberries
  • 250 ml Dairy-free cream (e.g., coconut cream)
  • 2 tbsp Powdered sugar
  • 5 leaves Mint leaves for garnish (optional)

Directions

Step 1

Preheat your oven to 100°C (210°F) and line a baking tray with parchment paper.

Pour the aquafaba into a clean mixing bowl and whisk using an electric mixer on high speed until it forms soft peaks, which should take about 10-12 minutes.

Gradually add the caster sugar, one tablespoon at a time, whisking continuously until the meringue is stiff and glossy. Mix in the vanilla extract.
