  • 800 grams Beef cheeks
  • 3 tablespoons Olive oil
  • 1 unit Onion, large, sliced
  • 2 units Carrots, large, sliced
  • 4 units Garlic cloves, minced
  • 1 unit Red bell pepper, chopped
  • 2 tablespoons Tomato paste
  • 250 milliliters Red wine
  • 500 milliliters Beef stock
  • 2 units Bay leaves
  • 1 teaspoon Thyme, fresh
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Parsley, chopped (for garnish)

Directions

Step 1

Heat olive oil in a large pot over medium-high heat.

Step 2

Season beef cheeks with salt and pepper.

Step 3

Brown the beef cheeks on all sides, about 5-6 minutes. Remove from pot and set aside.

In the same pot, add sliced onion and cook until translucent, about 5 minutes.
