Ingredients

  • 1 medium head Green cabbage
  • 0.5 medium head Red cabbage
  • 2 large Carrots
  • 0.5 medium Red onion
  • 0.5 cup, chopped Cilantro
  • 1 medium, seeded and finely chopped Jalapeño
  • 0.25 cup Lime juice
  • 2 tablespoons Olive oil
  • 1 tablespoon Apple cider vinegar
  • 1 tablespoon Honey
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Begin by preparing the vegetables. Slice the green and red cabbage very thinly and place them into a large mixing bowl.

Step 2

Peel and grate the carrots using a box grater or a food processor with a grating attachment. Add them to the bowl with the cabbage.

Step 3

Finely chop the red onion and cilantro, then add them to the bowl.

Step 4

Carefully seed and finely chop the jalapeño. Add to the bowl with the rest of the vegetables.

Step 5

In a separate small bowl, whisk together the lime juice, olive oil, apple cider vinegar, honey, ground cumin, salt, and black pepper to create the dressing.

Step 6

Pour the dressing over the vegetables and use salad tongs to toss everything together until well-coated.

Step 7

Taste and adjust the seasoning with more salt, pepper, or lime juice as desired.

Step 8

Let the coleslaw marinate in the refrigerator for at least 30 minutes before serving to allow the flavors to meld together.

Step 9

Serve as a refreshing side dish to your favorite Latin-inspired meals.
