Ingredients

  • 800 ml full-fat coconut milk
  • 200 g granulated sugar
  • 1 tsp vanilla extract
  • 0.25 tsp baking soda
  • 1 pinch salt

Directions

Step 1

In a medium-sized, heavy-bottom saucepan, combine the coconut milk, granulated sugar, and a pinch of salt. Stir the mixture over medium heat until the sugar is fully dissolved.

Step 2

Once the sugar is dissolved, add the baking soda. This will help prevent the coconut milk from curdling and assist in thickening the mixture.

Step 3

Bring the mixture to a gentle boil over medium-high heat, then reduce the heat to low and simmer. Stir frequently and ensure it does not stick to the bottom of the pan.

Step 4

As the mixture begins to thicken and darken in color, continue to cook it for about 40-50 minutes, stirring occasionally. The mixture will reduce in volume and become a rich, caramel brown color.
