  • 400 grams (canned, drained and rinsed) chickpeas
  • 1 medium, finely chopped red onion
  • 2 minced garlic cloves
  • 1 medium, grated carrot
  • 1 small, grated zucchini
  • 0.5 cup, chopped coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon chili powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon lemon juice
  • 1 cup rolled oats
  • 2 tablespoons olive oil
  • 4 dairy-free burger buns
  • 4 lettuce leaves
  • 1 large, sliced tomato
  • 1 sliced avocado

Directions

Step 1

In a food processor, combine the chickpeas, red onion, garlic, carrot, zucchini, and coriander. Pulse until the mixture is well blended but still chunky.

Step 2

Transfer the chickpea mixture to a large mixing bowl. Add cumin, smoked paprika, chili powder, salt, black pepper, lemon juice, and rolled oats. Stir until the ingredients are thoroughly combined.
