Ingredients

  • 1 cup Urad dal (split black gram)
  • 2 cups Water
  • 1 teaspoon Salt
  • 1 inch piece, grated Ginger
  • 1 finely chopped Green chili
  • 0.25 teaspoon Baking soda
  • 2 cups Coconut yogurt
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Roasted cumin powder
  • 0.25 teaspoon Red chili powder
  • 2 tablespoons, chopped Coriander leaves
  • 2 tablespoons Tamarind chutney
  • 2 cups for frying Oil
  • 0.125 teaspoon Asafoetida (hing)

Directions

Step 1

Rinse 1 cup of urad dal thoroughly in clean water and soak it in 2 cups of water for 4-5 hours or overnight.

Step 2

Drain the soaked dal and blend it into a smooth batter using minimal water. The batter should be thick and fluffy.

Step 3

Transfer the batter into a mixing bowl. Add salt, grated ginger, finely chopped green chili, and baking soda. Mix well using your hands to enhance the aeration of the batter.

Step 4

Heat oil in a deep frying pan over medium heat. Once hot, carefully drop spoonfuls of the batter into the oil. Fry them until golden brown and crispy. Remove and place them on paper towels to soak excess oil.

Step 5

In a separate bowl, whisk the coconut yogurt until smooth. Add salt, turmeric powder, roasted cumin powder, red chili powder, asafoetida, and mix well.

Step 6

Place the fried dumplings in hot water for 10 minutes. This will soften them. Gently squeeze the excess water out of each dumpling without breaking them.

Step 7

Immerse the dumplings in the prepared coconut yogurt mixture. Let them soak for at least 30 minutes to absorb flavors.

Step 8

Just before serving, drizzle tamarind chutney over the soaked dumplings. Garnish with chopped coriander leaves and extra roasted cumin powder, if desired.

Step 9

Serve the dairy-free dahi bade chilled or at room temperature as a delightful snack or appetizer.
