Ingredients

  • 2 sheets Puff pastry sheets
  • 800 ml Coconut milk
  • 100 g Cornstarch
  • 150 g Granulated sugar
  • 1 tablespoon Vanilla extract
  • 0.25 teaspoon Turmeric powder
  • 100 ml Water
  • 50 g Powdered sugar

Directions

Step 1

Preheat your oven to 200°C (400°F).

Step 2

Place the puff pastry sheets on separate baking trays lined with parchment paper. Use a fork to poke holes all over the pastry sheets to prevent them from puffing up too much.

Step 3

Bake in the preheated oven for about 15 minutes or until golden brown. Remove from oven and allow to cool completely.

Step 4

In a medium saucepan, combine coconut milk and sugar. Heat over medium heat until the mixture begins to simmer, stirring occasionally.

Step 5

In a small bowl, mix cornstarch and water until smooth to create a slurry.

Step 6

Gradually add the cornstarch slurry to the simmering coconut milk mixture, stirring constantly to avoid lumps.

Step 7

Add the vanilla extract and turmeric powder, stirring continuously until the mixture thickens to a custard-like consistency. This should take about 5-7 minutes.

Step 8

Remove the saucepan from heat and allow the custard to cool slightly, stirring occasionally to prevent a skin from forming on top.

Step 9

Place one sheet of baked puff pastry into a suitably sized baking dish.

Step 10

Pour the slightly cooled custard over the puff pastry sheet in the baking dish, smoothing out the surface with a spatula.

Step 11

Top the custard layer with the second sheet of baked puff pastry, pressing down gently to ensure it sticks to the custard.

Step 12

Refrigerate the assembled custard slice for at least 2 hours, or until completely set.

Step 13

Before serving, dust the top layer with powdered sugar for a decorative finish.

Step 14

Slice into portions and serve chilled.
