Ingredients

  • 300 grams All-purpose flour
  • 50 grams Sugar
  • 1 tablespoon Instant yeast
  • 0.5 teaspoon Salt
  • 150 milliliters Coconut milk
  • 100 milliliters Aquafaba (liquid from chickpeas)
  • 50 milliliters Vegetable oil
  • 50 grams Custard powder
  • 20 grams Cornstarch
  • 70 grams Brown sugar
  • 1 teaspoon Vanilla extract

Directions

Step 1

In a large mixing bowl, combine all-purpose flour, sugar, instant yeast, and salt. Mix well.

Step 2

In a separate bowl, whisk together coconut milk, 50 ml of aquafaba, and vegetable oil until smooth.

Step 3

Create a well in the center of the dry ingredients and pour in the wet mixture.

Step 4

Stir the mixture until a dough starts to form. Knead the dough on a floured surface for about 10 minutes until it's smooth and elastic.

Place the dough into a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until it doubles in size.

While the dough is rising, prepare the dairy-free custard filling.

In a saucepan, combine custard powder, cornstarch, and remaining 50 ml aquafaba. Mix to form a smooth paste.
