Ingredients

  • 1 cup Basmati rice
  • 2 tablespoons Coconut oil
  • 1 medium, finely chopped Onion
  • 2 minced Garlic cloves
  • 1 tablespoon, grated Fresh ginger
  • 1 medium, diced Carrot
  • 1 cup Frozen peas
  • 2 cups Vegetable broth
  • 2 teaspoons Curry powder
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons, chopped Fresh cilantro
  • 1 tablespoon Lemon juice

Directions

Step 1

Rinse the basmati rice under cold water until the water runs clear, then drain well.

Step 2

In a medium pot, heat the coconut oil over medium heat.

Step 3

Add the chopped onion and sauté until translucent, about 4-5 minutes.

Step 4

Stir in the garlic and ginger, cooking for another minute until fragrant.

Step 5

Add the diced carrot and cook for another 3 minutes, stirring occasionally.

Step 6

Mix in the curry powder, turmeric, cumin, and coriander, stirring to coat the vegetables evenly with the spices.

Step 7

Add the rinsed rice to the pot, stirring to coat with the oil and spices for about 2 minutes.

Pour in the vegetable broth and bring to a boil.
