Ingredients

  • 150 grams Rolled oats
  • 100 grams All-purpose flour
  • 80 grams Brown sugar
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Baking soda
  • 0.5 teaspoon Salt
  • 100 milliliters Coconut oil
  • 80 milliliters Maple syrup
  • 1 teaspoon Vanilla extract
  • 60 milliliters Water

Directions

Step 1

Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.

Step 2

In a large bowl, mix the rolled oats, all-purpose flour, brown sugar, baking powder, baking soda, and salt together until well combined.

Step 3

In a small saucepan over low heat, melt the coconut oil until it's liquid. Remove from heat and add the maple syrup, vanilla extract, and water. Stir until well combined.

Step 4

Pour the wet ingredients into the dry ingredients and mix until a dough forms. The mixture should be crumbly but should hold together when pressed.

Step 5

Using your hands, take about a tablespoon of dough and shape it into a small ball. Place it on the prepared baking sheet and flatten slightly with your palm to about 1cm thick. Repeat with the remaining dough, leaving some space between each biscuit.

Step 6

Bake in the preheated oven for 12-15 minutes or until the biscuits are golden brown around the edges.

Step 7

Remove from the oven and allow the biscuits to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Step 8

Once cooled, store the biscuits in an airtight container at room temperature for up to a week.
