Ingredients

  • 2 medium zucchini
  • 2 medium carrots
  • 1 large red bell pepper
  • 3 stalks green onions
  • 1 cup chickpea flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon black pepper
  • 0.5 cup water
  • 0.25 cup olive oil (for frying)

Directions

Step 1

Grate the zucchini and carrots using a box grater. Place the grated vegetables into a clean kitchen towel and squeeze out as much excess water as possible. Transfer to a large mixing bowl.

Step 2

Chop the red bell pepper into small pieces and finely slice the green onions. Add these to the bowl with the zucchini and carrots.

Step 3

In a separate bowl, mix together the chickpea flour, baking powder, ground cumin, garlic powder, sea salt, and black pepper.

Step 4

Gradually add the dry mixture to the vegetables, along with the water, and stir until everything is well combined and forms a batter-like consistency.

Step 5

Heat the olive oil in a large non-stick skillet over medium heat.

Step 6

Once the oil is hot, use a spoon to drop heaping tablespoons of the vegetable batter into the skillet, spreading them slightly to form fritters. Cook for 3-4 minutes or until the edges look golden and crispy.

Step 7

Carefully flip the fritters and cook the other side for another 3-4 minutes, until crispy and cooked through.

Step 8

Transfer the cooked fritters to a plate lined with paper towels to drain any excess oil.

Step 9

Repeat the process with the remaining batter.

Step 10

Serve hot with your favorite dairy-free dipping sauce or a squeeze of fresh lemon juice.
