Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 tablespoon ground flaxseed

  • 0.5 teaspoon onion powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Rinse the quinoa under cold water until the water runs clear to remove bitterness. Drain well.

In a medium saucepan, combine the rinsed quinoa and 2 cups of water. Bring to a boil over high heat.

Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is cooked and water is absorbed.

Remove the saucepan from heat and let it sit, covered, for 5 minutes. Fluff the quinoa with a fork and allow it to cool to room temperature.
