Ingredients

  • 2 large Russet potatoes
  • 1 medium Onion
  • 1 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 1 cup Soy milk
  • 2 large Eggs
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Garlic powder
  • 2 tablespoons Chives, chopped
  • 2 tablespoons Olive oil

Directions

Step 1

Peel and grate the potatoes using a box grater. Wrap the grated potatoes in a clean kitchen towel or cheesecloth and squeeze out as much liquid as possible.

Step 2

Peel and finely chop the onion. In a large mixing bowl, combine the grated potatoes, chopped onion, all-purpose flour, and baking powder.

In a separate bowl, whisk together the soy milk, eggs, salt, black pepper, and garlic powder until well combined.

Pour the wet mixture into the potato mixture and stir until everything is evenly combined. Stir in the chopped chives.
