Ingredients

  • 4 medium Russet potatoes
  • 3 tablespoons Olive oil
  • 1 medium Onion
  • 1 medium Red bell pepper
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley

Directions

Step 1

Peel and dice the potatoes into 1/2-inch cubes. Rinse in cold water to remove excess starch and drain well.

Step 2

Heat a large non-stick skillet over medium heat and add 2 tablespoons of olive oil.

Step 3

Dice the onion and the red bell pepper into small pieces.

Step 4

Add the potatoes to the skillet and spread them out in an even layer. Allow them to cook undisturbed for about 5 minutes, or until they start to crisp and brown on one side.

Stir the potatoes and continue cooking for another 5 minutes, adding more olive oil if necessary.

Step 6

Push the potatoes to the side of the skillet and add the remaining tablespoon of olive oil to the center. Add the diced onion and red bell pepper, and sauté for about 4-5 minutes until the vegetables are soft.
