Ingredients

  • 250 grams pitted green olives
  • 50 grams all-purpose flour
  • 15 grams cornstarch
  • 1 teaspoon paprika
  • 0.25 teaspoon cayenne pepper
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 90 milliliters chickpea liquid (aquafaba)
  • 100 grams panko breadcrumbs
  • 500 milliliters olive oil

Directions

Step 1

Drain the pitted green olives well and pat them dry with a paper towel to remove excess moisture.

Step 2

In a small bowl, mix together the all-purpose flour, cornstarch, paprika, cayenne pepper, salt, and black pepper.

Step 3

In another bowl, pour the chickpea liquid (aquafaba), and whisk it until slightly frothy.

Step 4

Place the panko breadcrumbs in a third bowl.

Step 5

Take each olive and first coat it in the flour mixture, shaking off any excess.

Step 6

Next, dip the coated olive into the aquafaba, making sure it is fully covered.

Finally, roll the olive in the panko breadcrumbs until it is well coated.

Repeat the coating process for all the olives.

Heat the olive oil in a deep frying pan or pot over medium heat to 180°C (350°F).
