Ingredients

  • 1 liter vegetable broth
  • 200 milliliters coconut milk
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 1 tablespoon fresh thyme leaves

Directions

Step 1

Peel and chop the parsnips into 1-inch pieces.

Step 2

Heat the olive oil in a large pot over medium heat.

Step 3

Dice the onion and add it to the pot, sautéing until soft and translucent, about 5 minutes.

Step 4

Mince the garlic cloves and add to the pot, cooking for an additional 1-2 minutes until fragrant.
