Ingredients

  • 400 grams cremini mushrooms
  • 2 tablespoons olive oil
  • 0.5 red onion
  • 100 grams baby spinach
  • 150 grams cherry tomatoes
  • 1 avocado
  • 100 grams raw cashews
  • 120 milliliters water
  • 2 tablespoons lemon juice
  • 1 garlic clove
  • 2 tablespoons nutritional yeast
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons fresh parsley

Directions

Step 1

1. Place the raw cashews in a bowl and cover with hot water. Soak for at least 15 minutes while you prepare the other ingredients.

2. Clean the cremini mushrooms with a damp towel and slice them thinly.
