Ingredients

  • 2 pounds Russet potatoes
  • 4 tablespoons Extra-virgin olive oil

  • 5 cups Fresh baby spinach
  • 3 Garlic cloves

  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Nutmeg

Directions

Step 1

Peel and cube the Russet potatoes into approximately 1-inch pieces.

Step 2

Place the cubed potatoes in a large pot and cover with cold water. Add a pinch of salt to the water.

Bring the water to a boil over medium-high heat, then reduce to a simmer and cook until the potatoes are tender and easily pierced with a fork, about 15-20 minutes.
