Ingredients

  • 2 pounds Russet potatoes
  • 2 tablespoons Olive oil
  • 1 cup Chicken broth
  • 0.5 cup Unsweetened almond milk
  • 1 teaspoon Garlic powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 4 slices Bacon
  • 2 tablespoons Chives (optional)

Directions

Step 1

Peel and quarter the potatoes. Place them in a large pot with enough water to cover them. Add a pinch of salt and bring the water to a boil over high heat.

Step 2

Once boiling, reduce the heat to medium-low and let the potatoes simmer, uncovered, for 15-20 minutes, or until they are tender and can be easily pierced with a fork.

Step 3

While the potatoes are cooking, place the bacon slices in a skillet over medium heat. Cook until crispy, about 4-5 minutes per side. Transfer the bacon to a paper towel-lined plate to drain excess grease, then crumble the bacon when cool enough to handle.

Step 4

Once the potatoes are done, drain them and return them to the pot. Add the olive oil and mash the potatoes with a potato masher until smooth.

Step 5

Over low heat, stir in the chicken broth and unsweetened almond milk, gradually adding each until the desired creaminess is achieved.

Step 6

Mix in the garlic powder, salt, and black pepper. Adjust seasoning according to taste.

Step 7

Fold in the crumbled bacon, reserving some for garnishing.

Step 8

Serve the mashed potatoes hot, garnished with additional bacon crumbles and chopped chives if desired.
