Ingredients

  • 1 large cauliflower head
  • 2 tablespoons olive oil
  • 3 medium garlic cloves
  • 0.25 cup unsweetened almond milk
  • 2 tablespoons nutritional yeast
  • 1 tablespoon lemon juice
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons chopped fresh chives

Directions

Step 1

Begin by preparing the cauliflower. Remove the leaves and cut the cauliflower into small florets.

Step 2

Rinse the florets under cold water and set aside.

Step 3

In a large pot, bring about 2 inches of water to a boil and place a steamer basket over it.

Step 4

Add the cauliflower florets to the steamer basket, cover, and steam for about 10-15 minutes, or until the cauliflower is fork-tender.

Step 5

While the cauliflower is steaming, peel and mince the garlic cloves.

Step 6

In a small pan, heat olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant. Be careful not to let it burn.

Step 7

Once the cauliflower is tender, transfer it to a blender or food processor.

Step 8

Add the sautéed garlic, olive oil, unsweetened almond milk, nutritional yeast, lemon juice, salt, and black pepper to the blender.

Step 9

Blend the mixture until smooth and creamy. You can adjust the consistency by adding more almond milk if desired.

Step 10

Taste and adjust the seasoning if necessary.

Step 11

Transfer the creamy mashed cauliflower to a serving bowl.

Step 12

Garnish with chopped fresh chives before serving.

Step 13

Serve warm as a delightful dairy-free side dish.
