  • 200 grams raw cashews
  • 120 milliliters water
  • 2 tablespoons olive oil

  • 1 clove garlic, minced
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh chives, chopped
  • 1 teaspoon onion powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Place 200 grams of raw cashews in a bowl and cover with hot water. Let them soak for at least 30 minutes to an hour to soften.

Step 2

Drain and rinse the cashews, then add them to a food processor or high-speed blender.

Step 3

Add 120 milliliters of water, 2 tablespoons of olive oil, and 2 tablespoons of lemon juice to the cashews in the blender.

Blend on high speed until the mixture is smooth and creamy, scraping down the sides as necessary. This should take about 1-2 minutes.
