Ingredients

  • 2 tablespoons Olive oil
  • 1 medium Yellow onion, chopped
  • 3 cloves Garlic cloves, minced
  • 2 stalks Celery stalks, chopped
  • 1 medium Carrot, chopped
  • 4 cups Fresh corn kernels
  • 4 cups Vegetable broth
  • 1 cup Coconut milk
  • 1 teaspoon Thyme, dried
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 cup Fresh basil, chopped (for garnish)

Directions

Step 1

In a large pot, heat olive oil over medium heat.

Step 2

Add the chopped onion, garlic, celery, and carrot. Sauté for 5-7 minutes until the vegetables are softened, stirring occasionally.

Step 3

Stir in the corn kernels and cook for another 2 minutes.

Step 4

Pour in the vegetable broth and bring to a boil. Reduce heat to low and let it simmer for 15 minutes until the vegetables are tender.
