Ingredients

  • 2 pieces Boneless skinless chicken breasts
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 2 tablespoons Olive oil
  • 250 grams Cremini mushrooms, sliced
  • 1 medium Onion, finely chopped
  • 3 pieces Garlic cloves, minced
  • 1 cup Chicken broth
  • 1 cup Coconut milk
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Fresh thyme leaves
  • 2 tablespoons Fresh parsley, chopped
  • 1 tablespoon Lemon juice

Directions

Step 1

Season the chicken breasts with salt and pepper on both sides.

Step 2

In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken breasts and cook for 5-6 minutes on each side until they are golden brown and cooked through. Remove them from the skillet and set aside.

Step 3

In the same skillet, add the remaining olive oil and reduce the heat to medium. Add the sliced mushrooms and cook for about 5 minutes until they start to brown.

Step 4

Add the onion to the skillet and sauté for about 2 minutes until it becomes translucent.

Step 5

Stir in the minced garlic and cook for another 1 minute until fragrant.

Step 6

Pour in the chicken broth and bring it to a simmer, scraping any browned bits from the bottom of the skillet.

Step 7

Stir in the coconut milk, Dijon mustard, and fresh thyme leaves. Simmer for about 5 minutes, allowing the sauce to thicken slightly.

Step 8

Return the cooked chicken breasts to the skillet, spooning some of the sauce over them. Simmer for another 5 minutes to let the flavors meld together.

Step 9

Just before serving, stir in the lemon juice and sprinkle with fresh parsley.

Step 10

Serve the creamy chicken and mushrooms over rice, pasta, or a bed of greens.
