Ingredients

  • 1 head Cauliflower florets
  • 2 tablespoons Olive oil
  • 1 medium Yellow onion, chopped
  • 3 cloves Garlic cloves, minced
  • 4 cups Vegetable broth
  • 1 cup Coconut milk
  • 2 tablespoons Nutritional yeast
  • 1 tablespoon Lemon juice
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Chopped fresh parsley (for garnish)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the chopped onion and garlic to the pot and sauté until the onion is translucent, about 5 minutes.

Step 3

Add the cauliflower florets to the pot and stir to coat with the oil.

Step 4

Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to a simmer and cover the pot.

Step 5

Let the soup simmer until the cauliflower is tender, about 20 minutes.

Step 6

Remove the pot from heat and use an immersion blender to blend the soup until smooth. Alternatively, carefully transfer the soup in batches to a blender and blend until smooth.

Step 7

Return the soup to the pot (if using a blender) and stir in the coconut milk, nutritional yeast, lemon juice, salt, and black pepper.

Step 8

Heat the soup over medium heat until warmed through, about 5 more minutes.

Taste and adjust the seasoning if necessary.

Serve hot, garnished with chopped fresh parsley.
