Ingredients

  • 2 pounds carrots
  • 2 tablespoons olive oil
  • 3 tablespoons coconut milk
  • 2 medium garlic clove
  • 1 tablespoon fresh thyme leaves
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Peel and chop the carrots into 1-inch chunks for even cooking.

Step 2

Peel the garlic cloves and leave them whole.

Step 3

Bring a large pot of water to boil over medium-high heat. Add the chopped carrots and whole garlic cloves to the boiling water.

Step 4

Cook the carrots and garlic for about 15-20 minutes, or until the carrots are very tender. Check with a fork to ensure they are soft.

Step 5

Once cooked, drain the carrots and garlic in a colander and allow them to sit for a minute to release all steam and moisture.

Step 6

Transfer the drained carrots and garlic to a large mixing bowl or a food processor.
