Ingredients

  • 4 medium (about 500g) beetroots
  • 2 tablespoons olive oil
  • 1 medium, chopped onion
  • 3 cloves, minced garlic
  • 1 medium, chopped carrot
  • 1 stalk, chopped celery
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon, chopped (or 1/2 teaspoon dried) fresh thyme
  • 1 teaspoon (to taste) salt
  • 0.5 teaspoon (to taste) black pepper
  • 2 tablespoons, chopped (for garnish) chives

Directions

Step 1

Peel and roughly chop the beetroots into small chunks.

Step 2

In a large pot, heat the olive oil over medium heat.

Add the chopped onion and cook for 5 minutes, stirring occasionally, until soft and translucent.

Stir in the minced garlic, chopped carrot, and chopped celery, cooking for another 5 minutes.
