Ingredients

  • 12 ounces spaghetti or pasta of choice
  • 2 large ripe avocados
  • 1 cup fresh basil leaves
  • 2 tablespoons lime juice
  • 2 small garlic cloves
  • 3 tablespoons extra virgin olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1.5 cups cherry tomatoes, halved
  • 0.25 cup pine nuts, toasted

Directions

Step 1

Bring a large pot of salted water to a boil over high heat.

Step 2

Cook the pasta according to the package instructions until al dente. Reserve 1 cup of the pasta water and then drain the pasta.

Step 3

While the pasta is cooking, halve and pit the avocados, scooping out the flesh into a food processor.

Step 4

Add the fresh basil leaves, lime juice, garlic cloves, extra virgin olive oil, salt, and black pepper to the processor with the avocado.

Step 5

Blend the ingredients until smooth, adding reserved pasta water a tablespoon at a time to achieve a creamy and pourable consistency, if needed.

Toss the drained pasta with the creamy avocado sauce until evenly coated.

Step 7

Gently fold in the halved cherry tomatoes.
