Ingredients

  • 2 pounds potatoes (Yukon Gold or Russet)
  • 3 tablespoons olive oil
  • 1.5 cups unsweetened almond milk (or any dairy-free milk of choice)
  • 2 cloves garlic, minced
  • 2 tablespoons nutritional yeast
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons chives, chopped
  • 1 tablespoon lemon juice

Directions

Step 1

Peel and cube the potatoes into 1-inch pieces for uniform cooking.

Step 2

Place the cubed potatoes in a large pot and cover with cold water. Bring to a boil over medium-high heat.

Once boiling, reduce the heat to medium and cook for about 15 minutes, or until the potatoes are fork-tender.
