  • 2 stalks celery stalks, chopped
  • 10 cups fresh spinach leaves
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 2 tablespoons nutritional yeast
  • 0.5 teaspoon black pepper
  • 1 teaspoon salt
  • 1 tablespoon lemon juice

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the chopped onion and sauté for about 5 minutes until the onion becomes translucent.

Stir in the minced garlic and chopped celery, and cook for another 2 minutes until fragrant.

Step 4

Add the fresh spinach leaves and stir continuously until they are wilted, about 3 minutes.
