Ingredients

  • 400 ml Coconut cream
  • 100 ml Maple syrup
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Cornstarch
  • 150 grams Non-dairy dark chocolate
  • 8 pieces Gluten-free ice cream cones
  • 50 grams Chopped almonds
  • 2 tablespoons Coconut oil
  • 0.5 teaspoon Sea salt

Directions

Step 1

1. In a medium saucepan, combine coconut cream, maple syrup, and vanilla extract. Stir in the cornstarch until fully dissolved.

Step 2

2. Place the saucepan over medium heat and cook, stirring constantly, until the mixture begins to thicken. Remove from heat and allow the mixture to cool completely, then transfer it to a freezer-safe container and freeze for at least 4 hours, or until solid.

3. Melt the non-dairy dark chocolate and coconut oil together in a heatproof bowl over a pan of simmering water, stirring until smooth. Once melted, remove from heat.

4. Spoon a small amount of the melted chocolate mixture into the bottom of each gluten-free ice cream cone and spread a thin layer around the inside of the cone to prevent leakage (optional step). Place the cones in a cup or cone holder and refrigerate for 5 minutes to set the chocolate.

5. Once the ice cream mixture is well-frozen, use an ice cream scoop to fill each cone, making a nice rounded top.
