  • 2 cups Masa harina (corn flour)

  • 1 cup Corn kernels, fresh or frozen
  • 0.5 cup Green chilies, diced
  • 0.25 cup Cilantro, chopped
  • 2 cloves Garlic, minced
  • 0.5 Onion, finely chopped
  • 1 tsp Cumin powder
  • 1 tsp Paprika
  • 0.5 tsp Black pepper

Directions

Step 1

Begin by soaking the dried corn husks in a large bowl of warm water. Allow them to soak for at least 30 minutes until they are pliable.

Step 2

In a large mixing bowl, combine the masa harina, baking powder, and salt. Mix well to distribute the baking powder evenly.

Slowly pour in the vegetable broth while mixing to form a smooth dough. Add the olive oil, and continue to mix until the dough is light and fluffy. The consistency should be like soft cookie dough.

Fold the corn kernels, green chilies, chopped cilantro, minced garlic, finely chopped onion, cumin powder, paprika, and black pepper into the masa mixture. Mix well to incorporate all the ingredients evenly.
