Ingredients

  • 1 cup Fresh corn kernels

  • 1 cup Plant-based cheese (shredded)
  • 2 tablespoons Chopped fresh cilantro
  • 0.5 teaspoon Cumin powder
  • 1 tablespoon Olive oil
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Ground black pepper
  • 1 piece Lime, cut into wedges
  • 1 piece Avocado, sliced (optional)

Directions

Step 1

Heat the olive oil in a large non-stick skillet over medium heat.

Step 2

Add the chopped red onion and red bell pepper to the skillet, and sauté for about 3 minutes until soft.

Step 3

Stir in the fresh corn kernels, cumin powder, salt, and black pepper. Cook for another 2-3 minutes until the corn is tender.

Step 4

Remove the vegetable mixture from the skillet and set aside in a bowl.

Wipe the skillet clean and warm it over medium heat.
