  • 6 large eggs
  • 0.5 cup unsweetened almond milk

  • 0.5 cup cooked bacon bits
  • 0.25 cup red bell pepper, diced
  • 2 tablespoons green onion, thinly sliced
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon avocado oil or non-stick spray

Directions

Step 1

Preheat your oven to 300°F (150°C).

Step 2

Prepare a muffin tin by lightly greasing it with avocado oil or spraying it with non-stick spray.

In a blender, combine the eggs, unsweetened almond milk, nutritional yeast, salt, and black pepper. Blend until the mixture is smooth and fully combined.

Pour the blended egg mixture into each muffin cup, filling them about halfway.
