  • 120 grams all-purpose flour

  • 120 milliliters water
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon cayenne pepper
  • 500 milliliters vegetable oil
  • 1 for serving lemon wedges

Directions

Step 1

1. Begin by poaching the cod fillets. In a medium saucepan, cover the cod with water and bring to a simmer over medium heat. Poach for 5 minutes until the fish is just cooked through. Remove from heat, drain, and allow it to cool.

2. While the cod is cooling, finely chop the garlic, parsley, and green onion.
