Ingredients

  • 1 medium zucchini
  • 1 large carrot
  • 0.5 medium red bell pepper
  • 3 stalks green onions
  • 0.25 cup fresh parsley
  • 0.5 cup chickpea flour
  • 2 tablespoons cornstarch
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon cumin powder
  • 0.25 cup water
  • 3 tablespoons olive oil

Directions

Step 1

Grate the zucchini and squeeze out excess moisture using a clean kitchen towel.

Step 2

Grate the carrot and finely chop the red bell pepper. Thinly slice the green onions and finely chop the fresh parsley.

Step 3

In a large bowl, combine grated zucchini, carrot, red bell pepper, green onions, and parsley.

In a separate bowl, whisk together chickpea flour, cornstarch, baking powder, salt, black pepper, garlic powder, and cumin powder.
