Directions

Step 1

After roasting the turkey, carefully pour the drippings from the roasting pan through a fine mesh strainer into a bowl to separate the fats from the juices. Allow the fat to rise to the top and then skim off approximately 2 tablespoons.

In a medium saucepan, heat the olive oil over medium heat. Once hot, whisk in the flour to create a roux, stirring continuously for about 2-3 minutes until the mixture turns a light golden color.
