Ingredients

  • 2 cans (each approx. 5 ounces) canned tuna in water
  • 4 tablespoons dairy-free mayonnaise
  • 2 celery stalks, finely diced
  • 0.25 cup red onion, finely chopped
  • 1 tablespoon lemon juice
  • 1 teaspoon dijon mustard
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley
  • 4 slices slices of whole grain or gluten-free bread
  • 2 teaspoons olive oil
  • 1 cup mixed greens or arugula

Directions

Step 1

Drain the canned tuna and transfer it to a medium-sized bowl.

Step 2

Add dairy-free mayonnaise, diced celery, chopped red onion, lemon juice, dijon mustard, salt, black pepper, and chopped fresh parsley to the bowl with the tuna. Mix thoroughly until well combined.
